"When deciding what to drink with these scallion pancakes, consider the wide variety of liquids already in the recipe: sambal (a chili-based sauce), rice wine vinegar, Asian sesame oil, extra virgin olive oil, either grapeseed or canola oil, and of course, good old hot water. It’s almost like you could pick and choose which flavor to complement with your beverage.

Try a New Zealand Sauvignon Blanc like the 2008 Bird “Old Schoolhouse Vineyard” (around $15) to go with the sambal. A versatile sparkling wine (such as Gloria Ferrer) spruces up the meal and adds some tingle. And the scallions could easily be picked up by something ginger-flavored. Take your pick!"
